Professional cooks will teach you how to whip up a local Awadhi delicacy combining traditional cooking methods and modern techniques. From secret recipes from royal kitchens to forgotten recipes that have been passed down for many generations, embark on this culinary journey that best unveils the Awadhi passion for food. Taste the fruits of your labour and relish a dinner in the kitchen later.
A mention of Awadhi cuisine conjures up the vision of an elaborate spread with exotic dishes like Korma, Salan, Kebabs, Biryani, and sweets like Kheer and Phirni, enhanced with Attar (scent) and decorated with flattened silver and gold leaf called ChandiWarq and SonaWarq.
Characterized by delicate flavours and refined techniques, Awadhi food is in a league of its own as one of the most sophisticated Indian cuisines. Synonymous with heirloom recipes, secret ingredients and subtle flavours, Awadhi dishes have set high standards for gastronomy not just in the country, but even across the world.
An orientation session will help you understand the basics of Indian cooking techniques and also learn about the evolution of Awadhi cuisine over the centuries. Learn about the trademark ‘Dumpukht’ style of preparation, which has origins in Persia and Central Asia. Awadhi dishes involve cooking in a heavy-bottomed vessel with a dough-sealed lid for several hours. The principle is to allow the food to be infused with the flavours of mild spices.
You will be served evening drinks along with some traditional appetisers during this time. Following this, a workshop will guide you through the steps involved in Awadhi-style cooking. You will learn to cook two specialities over a live cooking demonstration, which you can relish for dinner.

Thanks for organising a great trip to Lucknow and Varanasi. The hotels at both the places were excellent; we had a great guide in Varanasi who went beyond the designated tour route and showed us around.
